Warm Roast Potato Salad with Black Forest Bacon


Potato salads make the perfect accompaniment to many meat dishes or a delicious and hearty meal on their own. I personally prefer the roasted potatoes instead of usual boiled one for my potato salads as it intensifies the flavour. If you can't find the smoky black forest bacon, use regular bacon.

  • 800 g Small potatoes, cut into 2-3 chunks
  • 2 tbsp Rosemary infused olive oil
  • Salt
  • 5 slice Black forest bacon, chopped
  • 1 tbsp Fresh rosemary leaves
  • 2 tbsp Sour cream
  • 2 tbsp Homemade mayonnaise
  • 1/2 tbsp Lemon juice
  • 1/2 tbsp Capers, drained and chopped
  • 1/2 tbsp Fresh basil leaves, chopped
  1. Heat oven to 210C/420F. Place the potatoes in a roasting pan, then rub with rosemary infused olive oil, rosemary leaves and a sprinkling of salt. Roast for 30 mins until the potatoes have turned a deep golden brown. Leave to cool slightly.
  2. Heat a skillet over medium heat. Dry-fry the chopped bacon until crisp. Whisk sour cream, mayonnaise, lemon juice, capers, and the basil in a large bowl. Add in roasted potatoes and crispy bacon. Toss to coat and serve.

  4. That looks lovely! I do love warm potato salads...and if they have bacon in them, well then, I'm an instant fan!!!
    Oh...and I made homemade mayo for the first time last week... WOW, did my arm hurt!! Then I told a friend of mine and she said "why didn't you use your stand mixer?" LOL Well, that would not have been as fun, I guess!!!

  13. Black forest bacon, I've never heard of that before! Sounds yummy though. This potato salad looks awesome - I like my potatoes roasted also. I think mostly it's because of that crispy skin. Yum!

  14. Before I saw a picture, I wanted this salad -- the name conjured up everything warm and comforting and homey. And then I looked at the pictures and read the recipe and I'm completely sold. Although I'm a fan of potato salad of any stripe, I'm particularly fond of warm ones. This is a keeper.

    I use potatoes to make the gravy of the curry thick. I have tried several other recipes on blogs but never a salad. Thanks for sharing it.

  48. This salad looks very satisfying for me! I could eat this as the main entree -- it looks so good! You're right, I love roasting potatoes for a salad, well, actually, for anything, really. I agree it intensifies the flavor, and they just end up looking absolutely gorgeous!

    Your roasted warm potato salad, with the Black Forest bacon, can only be found in Germany, I suppose. I love the salad, and it also brings back great memories of the warm German potato salad that was very popular in the seventies.
    I would prefer your salad better, which is so delicious and comforting with the homemade mayonnaise!
