Low-fat Spaghetti alla Carbonara



Carbonara, an Italian favourite, is a classic pasta sauce usually made with cream, bacon (Guanciale or jowl bacon)and Parmesan (Pecorino will work too) and is absolutely nutritious and delicious. Instead of heavy cream, I used milk for a healthy treat. Well, you wouldn't notice that it's low-fat because it's just as yummy even without using cream.

  • 180 g Tomato spaghetti
  • 100 g 3% Rindless bacon, sliced
  • 1 tbsp Olive oil
  • 2 Shallots, diced
  • 1 clove Garlic, minced
  • 2 Eggs
  • 140 ml Wholemilk
  • 20 g Parmesan cheese, finely grated
  • 1/2 tsp Freshly ground black pepper
  • 1/2 tbsp Parsley, chopped
  1. Cook pasta in a large pot of boiling salted water, following packet directions, until just tender. Meanwhile, heat the olive oil over medium heat. Cook diced shallots, minced garlic and bacon for 5 minutes until golden.
  2. Beat together eggs, wholemilk, half of grated Parmesan and black pepper. Drain the spaghetti and return to the pot, off the heat. Add in parsley, the bacon and egg mixtures, and toss together until the spaghetti is evenly coated. Divide pasta between two bowls and then serve with the rest of Parmesan cheese.

  24. The picture says it all. I do not use cream in my carbonara - just the egg yolks, spices and cheese (well, there's the bacon). I finished dinner and could easily move on to your pasta.

  27. I don't consider it low-fat cos you used whole milk and I love every part of it. I will use whole milk too cos that is always in my fridge. Lucky you did not use low-fat milk...if not, we will not taste the richness of cream anymore.

  32. I love carbonara pasta but always feel that it's slightly high cholesterol so I have it just once in a blue moon. This slightly low fat version is a good one! I would love to give it a try, thanks for sharing!

  38. As vegetarian and italian I really miss carbonara, there is nothing so flavorful and salty between veggies that can substitute bacon...I make this with zucchini, it's delicious but not the same...

  44. Carbonara is one my all time favorite dishes. I actually just made it for the first time a few months ago. I was always afraid of scrambling the egg! Yours looks wonderful...I like the use of of milk in place of the cream for a little healthier take. Thanks for sharing!

  66. What a great idea, to use milk instead of cream. I usually add the cream or coconut milk at the very end of creamy dishes...I find that you only need about the half the original amount, as it does not 'cook down' in the dish that way. I'll have to try this (with veggie bacon though... as a bonus that would cut down the fat even more)
