Poppy Zucchini Salad



I know what you are thinking now: "zucchini AGAIN?". YEP! I adore fresh seasonal veggies a lot and of course you can get zucchini throughout the year, but the best ones appear during late spring or early summer time. Zucchini has a high water content, so it makes the perfect food for people on diet. Besides that, it contains good amount of vitamin C, and A, both of which are very important and necessary for good health.

  • 180 g Zucchini
  • 2 tbsp Walnut oil
  • 1/2 tbsp Freshly squeezed lemon juice
  • 1/2 tbsp Clear honey
  • 1 tsp Garlic, crushed
  • 1 tsp Poppy seeds©angiesrecipes
  • Salt and pepper to taste
  1. Rinse and dry the zucchini. Cut both ends off and grate the zucchini into the long thin strips. Place them in a large salad bowl.
  2. Whisk together the walnut oil, lemon juice, honey, crushed garlic, poppy seeds, salt and pepper in a bowl. Toss the zucchini strips with the dressing until combined. Serve as soon as possible.

  1. I totally could see this being used as a replacement, like spaghetti squash for pasta! That strawberry salad I made had poppy seeds, they make things so good don't they?

    I just had a quinoa sad with zucchini, so I am with you on season veggies!

  4. The dressing you made to go with my favourite summer squash is excellent!
    Although poppy seeds do add a very nice aesthetic appeal...I'm not a fan.
    I may just add some lightly toasted sesame seeds instead ;o)

  7. I would say a big Yes to this! Very lite and very summery. Love Zucchini and love the way you have cut it!

  21. See and I was just thinking "Zucchini, Again! Yea!" I really like zucchini. Always good to see another variation on it. The honey is an interesting addition, though I'm not sure I can find clear honey. A golden, though good quality, honey might have to do. (I admit to having become something of a honey snob, or does connoisseur sound better?)

  24. I should tell myself to try zucchini again! It is not my fav veg. I think most of the Western eateries spoil it for me - I do not like them imperfectly roasted and served as soggy veg aside my main course.
    But your preparations are always so different and you must be a zucchini fan :D

    we don't get any black poppy seeds here , the white ones i like to use in my salads or curries....this salad is sure to be adapted soon.

  39. Never know that poppy seeds can be used for salad but they are banned in Singapore. Don't mind to eat zucchini every day to maintain a good health. Wow! Your photo looks gorgeous!

  48. Do you know I just began liking zucchini last summer? And now I love it! And this with the poppy seeds, another one of my favorites. So fresh and delicious. We get the best zucchini in late summer here.

  54. Adding poppy seeds is brilliant; one think it does is add extra crunch to the zucchini; love the dressing too and the idea of using walnut oil instead of te olive oil I always resort to.

  60. I immediately zeroed in on the walnut oil which is sitting in my cupboard barely used. Must try it more often with the vegetables. As for the zucchini recipes: bring them on. Zucchini season is coming soon and this looks so wonderfully luscious. It just wouldn't be the same in the winter.

  66. Fresh seasonable veggies is the only way to go. Love seeing you do this and come up with such innovative recipes. How did you cut them into such long strips - you said grade - but that would not be easy.... did you use a mandoline?

  69. A Thought For Food: Do you mean the Chinese roasted sesame oil? I have noticed the sesame oil here in Germany is not quite the same as we use in Chinese cuisine. I believe it works too if you are using the clear sesame oil.
