Zucchini Ribbon Caper Salad

The lemon juice and olive oil dressing makes this zucchini salad tastes fresh, while capers definitely add flavour and interest to this summer squash salad. Super simple and absolutely delicious!

  • 2 tbsp Olive oil
  • 1/2 Lemon, zested
  • 1 Garlic, crushed
  • Salt and pepper
  • 1 Tomato, deseeded and julienne

  17. Growing up, I always put capers on my bagels and lox. Unfortunately, my husband isn't a big fan of them, so I rarely get to use them in dishes.

With that being said, I think that I might have to make an exception for this beautiful salad. It looks so refreshing.
