Fig and Hazelnut Amaretti

Nutty, chewy and fruity with a slightly crispy bottom, these naturally gluten free cookies enriched with lemon zest and dried figs are perfect accompaniment to coffee, tea, hot chocolate or ice cream.
Amaretti cookies are traditionally made with almonds, sugar, and egg whites. The name "Amaretti" comes from the Italian word "amaro," meaning bitter, a reference to the use of bitter almonds in the original recipe. But other nuts, like hazelnuts, walnuts or macadamias are great alternatives.

 
  • 150 g Ground hazelnuts
  • 100 g Caster sugar
  • A pinch Sea salt
  • Finely grated zest of 1 lemon
  • 50 g / 3 Dried figs, very finely chopped
  • 60 g / 2 Large egg whites
  • Icing sugar
  1. Line a baking tray with parchment paper. Set aside. Preheat the oven to 180C/350F.
  2. Put the ground hazelnuts, sugar, salt and lemon zest in a medium bowl. Using your fingertips, rub the lemon zest into the mixture. Stir in the very finely chopped figs so they are all well coated.
  3. Whisk the egg whites in a separate bowl until foamy and just starting to form soft peaks. Add to the hazelnut mixture and stir to make a soft, sticky dough.
  4. Wet the palms of your hands with cold water and roll a small spoonful of the dough into a ball. You should have 20 balls. Place on the prepared baking tray and bake for 15-20 minutes until golden brown. Dust with icing sugar if desired.
