Blackened Pineapple

Simple, sweet, smoky, and deliciously juicy---the pineapple caramelizes beautifully on the grill and served with a fiery herby mixture. It makes a great snack or side with grilled meat. You can grill the wedges with skin on and cut the wedges by sliding a pairing knife in between the skin and flesh of pineapple.

 

Blackened Pineapple

  • 1 Pineapple, peeled (or not), crown left on and quartered
  • 25 g Flat parsley (cilantro or mint), finely chopped
  • 2 Garlic cloves, peeled and finely grated
  • 1 tsp Hot sauce of your choice
  • 1 Organic lime, zested and juiced
  • ½ tsp Freshly milled black pepper
  • Sea salt, to taste
  • Chilli threads, to garnish (optional)
  1. Cut the pineapple into quarters with the tops still left on. Heat a barbecue or a griddle pan on the stove to a high heat. Grill them for 5-8 minutes on each cut side until you have nice char marks.
  2. Meanwhile, combine parsley, garlic, hot sauce and lime zest in a bowl. Season with black pepper and salt.
  3. Once the pineapple comes off the grill, brush with the lime juice and scatter over the parsley mixture and garnish with chilli threads. Enjoy!
