Tender, flavourful side of salmon with a tasty crumb made with pine nuts, macadamia nuts, and fresh dill is perfect for a party: it takes minutes to put together, can be prepared ahead, and looks really impressive. you didn't need to use pine nuts and macadamias since they are relatively expensive. Pistachios, walnuts or hazelnuts are great substitutes.
- 1 kg Salmon filet half
- 200 g Pine nuts
- 50 g Macadamia nuts
- 50 g Fresh dill
- Sea salt and pepper
- 2 tbsp Dijon mustard
- 2 tbsp Olive oil
- 2 Organic lemons

- Preheat oven to 180C/350F. Grease or line a baking tray with baking paper.
- Blitz pine nuts and macadamia nuts roughly in a food processor then add ½ bunch of dill, a pinch of salt and a good grind of pepper and blitz again until the mixture resembles fine breadcrumbs.
- Place salmon on the tray, skin side down and brush with Dijon mustard. Press the herby nut mixture over the salmon, completely covering it.
- Bake in the middle of the hot oven for 20-25 minutes or until the salmon is cooked through, but slightly pink in the middle. If the center of the salmon is opaque, it's likely overcooked.
- Cut one lemon into wedges and set aside for serving. Juice the other lemon and combine the juice with the olive oil to make a dressing.
- Pour dressing over the fish as soon as you remove it from the oven. Serve with lemon wedges and remaining dill.
