Very often just a few ingredients are all that’s needed to make a really flavourful and comforting meal with minimum effort. Get a spoon and dig in! I used canned borlotti beans, making this recipe a total cinch to put together, but broad beans, butter beans or chickpeas would work beautifully. If desired, add a tablespoon of honey to make it sweet and spicy. Serve with a steaming bowl of saffron scented rice or crusty bread for an even more substantial meal.
Sherry-glazed Chorizo and Borlotti Beans

- 2 tsp Olive oil
- 125 g Dried chorizo, sliced
- 80 ml Dry sherry
- 400 g Canned borlotti beans, rinsed, drained
- 2 tbsp Flat-leaf parsley, roughly chopped
- Salad greens, to serve

- Heat olive oil in a frypan over medium-high heat. Add chorizo and cook, turning, for 3-4 minutes until crisp. Add 3/4 of sherry, then cook, stirring occasionally, for 3 minutes or until chorizo is glazed and the liquid has evaporated.
- Add borlotti beans and remaining sherry, then cook, stirring occasionally, for a further 5 minutes or until borlotti beans are warmed through.
- Sprinkle over chopped parsley, season and serve warm over a bed of greens.

I have never heard of those beans before, but I imagine I could find something that would be a decent substitute. I like dishes with beans and sausage. I usually make my own chorizo, which would not be in a casing, but the flavor should still be on target.
