If you’re a fan of traditional seafood boil or the viral onion boil that has recently been circulating on youtube and tiktok, or simply because you love eggs, garlic and butter, you need to try this soft egg boil. The preparation is slightly different than the traditional boil, but it's equally buttery and downright delicious. The sauce comes together in minutes, and is so saucy and flavourful you will want to enjoy every morsel soaked up with bread, rice or pasta. If you ain't fancy for soft-boiled eggs, simply hard boil them.
- 4-6 Large eggs
- 2 tbsp Unsalted butter
- 3-4 Garlic cloves, peeled and minced
- 1/4 tsp Red chilli flakes, or to taste
- 2 tsp Cajun seasoning (or old bay seasoning)
- 2 tsp Xylitol (or brown sugar)
- 1 tsp Onion powder
- 1 tsp Lemon pepper
- 1 tsp Paprika
- 150 ml Chicken stock (preferably homemade)
- 2 tbsp Lemon juice
- Salt and black pepper, to taste
- Green onions, thinly sliced or parsley or chive (for garnish)

- Fill a medium bowl with cold water and some ice. Set aside.
- In a medium pot, bring water to a boil and gently lower the eggs in. Boil for 7 minutes for runny egg yolks. Remove the eggs from the hot water and place in the ice bath. Allow to cool for a few minutes or until cool enough to handle. Peel the eggs. Set aside
- In a medium skillet over low-medium heat, melt the butter. Add the minced garlic and cook for a couple of minutes until fragrant. Add the all of the seasonings and cook for a minute. Pour in the stock and increase the heat to medium-high. Bring it to a boil, then lower the heat and let simmer for 6-8 minutes or until the sauce has reduced slightly. Whisk in the lemon juice and taste and adjust for seasoning.
- Half and place the eggs in a shallow bowl or plate and pour the sauce over. Garnish with chopped spring onion. Enjoy!
