This fruity avocado salad with mango tastes simply delicious. Chilli rounds off the whole thing with a spicy note and the rice crackers provide the crunchy effect. If you want to use some homemade croutons, then cut the 2-3 slices of wholegrain bread into 1 cm cubes and dry toast them in a skillet until golden and crunchy. Remove and toss with a tablespoon of olive oil.

- Wash and spin dry the baby salad leaves. Peel the mango, avocado and cut each into 1 cm cubes.
- To make the dressing, place all the ingredients, except olive oil, in a glass or bowl and mix well with a whisk. Then drizzle in olive oil and continue stirring until well combined. Season with salt and pepper to taste.
- Toss baby salad leaves, diced mango and avocado and chopped mint to the dressing and serve the the salad garnished with the rice cracker or croutons. Or arrange separately in a large bowl and mix at the table.

ReplyDeleteUna de las ensaladas más ricas para mi es la que se compone, entre otros, de mango y aguacate. Lo que no conozco es la vinagreta, ni miso, ni algarroba están entre los ingredientes que utilizo para aderezar, pero la algarroba madura me encanta, por eso creo que la vinagreta también lo hará.

I can get avocados from time to time but Mangoes are a rare delicacy. I will keep looking as this looks amazing . Cheers Diane

I am fascinated by the carob syrup -- I am not sure I can buy it locally, but I did find it online. Ingredients like this are lots of fun!
