You love cheese? Great, so do I! Simply use your favourite cheese, add a few grapes, nuts and a light vinaigrette and you have the tastiest salad for the lunch: a grape and cheese salad. It brightens up the mundane of cold season with its freshness and variety and also provides a portion of vitamins. The salad tastes great with classic cheeses such as Edam, Cheddar, Emmentaler or Gouda. If you like it more intense, try it with blue cheese or goat cheese.

- Wash the arugula and radicchio thoroughly and pat dry with kitchen towel or in a salad spinner. Place the leaves in a large salad plate or bowl.
- Wash the grapes and halve them if necessary. Cut the cheese into bite-sized cubes.
- Roughly chop the nuts and heat a dry skillet until hot. Add the pecans and spread out in a single layer. Stir frequently to keep the nuts from turning too brown. Cook for 3 to 5 minutes. Remove and set aside.
- Mix the olive oil, white wine vinegar, honey, pul biber, salt and pepper to make a dressing.
- Spread the cheese, grapes and nuts over the rocket and radicchio and pour the dressing over it. Enjoy the salad with bread if desired.
Yes, I love cheese and I also absolutely love this beautiful salad!
ReplyDeleteI like the combination of colours in it.
ReplyDeleteMe gusta todo lo que lleva, ahora son rúculas y canónigos los que componen mis ensaladas, más todos los ingredientes que me apetezcan, que pueden ser los componentes de tu plato perfectamente.

ReplyDeletePul biber? Some sort of seasoning? I am not a cheese eater but an occasional bit of blue cheese suits me :=) This sounds tasty Angie. I can never pronounce arugula, so luckily we call it rocket here in australia...
