Soft, tender rose-shaped bread buns made with a mildly sweet white spelt dough. I baked these plain, but you can spread a thin layer of nuts or chocolate spread over once all the layers are done. They are so easy to make and are perfect for any occasion, plus making them is as fun as eating them.

- In the mixing bowl of stand mixer fitted with a dough hook, add in spelt flour, instant dried yeast, sugar and salt. Make a well in the center, pour in lukewarm milk, melted butter and egg.
- Mix at low speed until all the ingredients come together. Increase the speed and knead the dough for 5-7 minutes until elastic and smooth.
- Turn out the dough on your work surface and shape into a ball. Grease the mixing bowl with a bit of oil or butter. Return the dough ball and cover with a clean kitchen towel. Proof at room-temperatue for an hour until doubled in volumn.
- Turn out the dough onto a lightly floured work surface and divide the dough into 8 even portions. Shape each portion of dough into a round and set aside. Cover with a kitchen towel and let rest for 10-15 minutes.
- Lightly dust your work surface again. Roll each dough ball into a 20-22cm disc. Cut the dough disc into 4 even wedges. Now cut each wedge into 3 small even wedges. So you have 12 wedges.
- Layer one wedge over another (as the photos above showed) and press the layers to attach. From the spitze, roll the layered wedges up to form a rose-shaped bun. Pinch to seal. Place it on a baking tray lined with baking paper. Shape the petals by gently fanning them out. Repeat with remaining dough balls.
- Cover the buns with a kitchen towel and set aside for 15 minutes. Meanwhile preheat the oven to 180C/350F. Mix the egg yolk and milk in a small bowl. Brush the buns with egg glaze.
- Bake in the middle of hot oven for 25-30 minutes until nicely golden. Remove and cool slightly. Dust with icing sugar and enjoy.

ReplyDeleteThose look uber lovely, I would eat them with something savoury probably. Spelt flour is currently on discount in our supermarket, but I do not use it since it has gluten.
