Asian Marinated Eggs

These marinated eggs are soft/hard boiled eggs soaked in a savory Asian marinade made with gluten free soya sauce, coconut sugar, rice vinegar, broth, spring onion, garlic, ginger and sesame seeds, transforming them into the perfect low carb snack or enjoying them over some steamed rice or noodles. Soak the eggs for at least 2 hours, preferably overnight or up to 24 hours. I wouldn't leave the eggs in the marinade for longer than 24 hours as they can get pretty rubbery. Store the eggs in an air-tight container for a week.

 
  • 6-8 Eggs, soft or hard-boiled
  • 60 ml Gluten free soya sauce (I used Kikkoman gluten free soya sauce)
  • 1 tbsp Coconut sugar
  • 2/3 tbsp Blakc rice vinegar
  • 200 ml Broth or water
  • 2-3 stalk Spring onion, finely sliced
  • 2 Garlic cloves, peeled and minced
  • 1/2 tbsp Freshly grated ginger
  • 2 tbsp Coriander, finely chopped
  • 2 Chilli peppers, one deseeded and finely chopped, one cut into rings
  • 2/3 tbsp Sesame seeds, toasted
  • 1 tbsp Toasted sesame oil
  1. Boil eggs in a large pot of boiling water for 7 minutes for soft-boiled and 10 minutes for hard-boiled. Soak the Eggs in cold water for 5-10 minutes, then peel. Make a few of slits on the egg whites so they can absorb the marinade better.
  2. In a bowl, combine the remaining ingredients for the marinade. Mix until well combined.
  3. Add the peeled eggs, ensuring they are fully covered with the marinade. Refrigerate for at least 2 hours, or preferably overnight.

  1. Yes, no, thanks LOL I always found weird the things Asians do with eggs especially pickling them.... the strangest of things. I have seen an Asian woman putting an egg white into her whiskey and drinking it.... I mean why, oh, why? LOL

    1. *huge smile* Why is 'pickling eggs' weird? I was born in northern Europe and we pickle them there also . . . as we do here in Australia! Perhaps you could try . . . perchance you would like ?
