This beautiful autumnal salad is loaded with sweet and savory mix-ins, like crunchy fuyu persimmon, apple, dried cranberries, toasted pecans, and shaved Parmigiano Reggiano. A creamy nutty pistachio vinaigrette brings it all together. I used mâche as the salad base, but baby spinach, arugula or endivie all work great.

- In a blender, puree all the vinaigrette ingredients until the mixture is smooth and well incorporated. Chill until ready for use.
- Arrange the mâche on a large serving plate. Top with sliced persimmon and apples. Then scatter the dried cranberries and toasted pecans over. Finally shave some Parmigiano Reggiano all over the salad.
- Serve the salad with prepared pistachio vinaigrette.
