It's easy, quick and delicious. The salad goes well with some homemade bread. If you like, use raisins or other dried fruit instead of dried cranberries. It makes a great easy lunch or side with any meat dishes.

- Wash the carrots, then using a spiralizer, a peeler or a box grater prepare the carrots and set aside in a large bowl.
- Combine the oliveo il, truffle balsamic glaze, garlic, salt and pepper together in a small bowl.
- To the bowl with the carrots, add dried cranberries, chopped mint leaves and dressing. Toss everything together. Serve the salad sprinkled with chopped smoked almonds.
...an autumnal treat!
ReplyDeleteI do eat a lot of carrots like a bunny. I actually made a pie with them today, you just grate five or six big carrots, ad some seasonings, garlic, salt, vegeta if you have it, two eggs, a few spoons of oil and them about a cup of corn flour. You mix that together, pour it into a mold, silicone or paper covered and bake for half an hour. In the end it turns thick and compact like a pudding. Very nice for a lunch or dindins.

ReplyDeleteThe mere word “Balsamic” sends me into realms of ecstasy. A friend of mine was in Modena last year and brought back a very fine balsamic for me. We use it sparingly, primarily with a really good olive oil for dipping with fresh bread. It I believed in heaven this is what it would be like!
