If you like easy and delicious treats with just a few ingredients, these sunflower seed bites are for you. You can even leave out the chocolate or use a healthier black chocolate for dipping. Mix in other seeds, like pumpkin seeds and sesame seeds to the recipe if you like. They are deliciously crunchy, naturally gluten-free and refined sugar free.

- Preheat the oven to 180C/350F. Line a baking tray with parchment paper. Set aside.
- Using a small sharp knife, split the vanilla bean in half lengthways. Then scrape along the cut surface to collect the seeds.
- In a mixing bowl, add in sunflower seeds, pinch of salt, vanilla seeds and maple syrup. Mix until everything is well combined.
- Press a tablespoon of mixture in a small round cookie cutter, then remove slowly to shape into flat rounds. Alternatively, you can just drop the tablespoons of mixture onto the prepared baking tray, shaping them into clusters. You get about 15 portions. These cookies won't rise or spread so they can be fairly close.
- Bake for 18 minutes in the middle of hot oven until golden brown. Remove and set aside to cool completely to firm up before frosting.
- Meanwhile, chop the white chocolate couverture and place them in the top of the double boiler or a heatproof bowl. Fill the bottom of the double boiler or a saucepan if using bowl with about 5cm / 2 inches of water and place on low heat. When the water begins to steam, nestle the bowl with the white chocolate into the saucepan. Make sure that the water is just steaming, not boiling, and that the bottom of the white chocolate bowl does not touch the water. Stir the white chocolate constantly as it melts.
- Once completely cooled, dip the bottom of the sunflower seed bites into melted white chocolate couverture and then gently place them on another piece of parchment paper. Allow the white chocolate to set for at least an hour. Or you can simply drizzle some chocolate on top instead.

ReplyDeleteThis is how I make them as well, I used to make Florentines but they have an egg white mixed in with honey, so I once tried just with honey and it worked. And one can mix nuts too. I do eat a lot of sunflower every week, but my Vojvodina is a land of sunflowers so no surprise there :)
