When you want a curry in a hurry, use store-bought green curry paste for this fragrant, tasty Thai-style meal which can be whipped up in just 15 minutes! If green curry paste ain't available, then use the red one. Use other vegetables (zucchini, green beans or snap peas) if you prefer.

- Heat a large non-stick skillet over medium-high heat. Add the coconut oil and heat until very hot. Add the curry paste and stir-fry for 1 minute or until aromatic. Add the coconut milk. Reduce heat to medium and simmer for 2-3 minutes or until the mixture thickens slightly.
- Add in fish stock and bring to the boil. Now add in the snow peas, then the fish chunks and cook for 3-5 minutes or until the fish is cooked through. Season with fish sauce and lime juice. Sprinkle on the chilli and coriander. Serve with steamed rice if desired.
