Pan-seared Salmon with Almond Anchoïade

Anchoïade is a classic Provençale sauce made with tinned anchovies, olive oil, red wine vinegar and garlic. This version, adapted from Sitka Seafood, includes toasted almonds, flat parsley and chillie flakes, but its essence remains the same. Provençale anchovy sauce goes splendidly with a selection of vegetables, both raw and blanched, and seafood. It's also great on bread or as a salad dressing.

 
Almond Anchoïade
  • 2x180 g Skinless salmon fillets
  • 1 tbsp Mustard powder
  • Sea salt and black pepper
  • 1 tbsp Tallow (or ghee)
  • Salad, to serve
  • 35 g Almonds, toasted
  • 6 Anchovy fillets in olive oil
  • 2 Garlic cloves, peeled
  • 80 ml Extra virgin olive oil
  • 2 tsp Red wine vinegar (or to taste)
  • A handful of flat parsley
  • 1 tsp Red chilli flakes
  • Salt & pepper to taste
  1. Toast almonds until they are fragrant and have a little colour. Set aside to cool. Add all of the sauce ingredients to a small food processor and process until it has the consistency of a tapenade. You don't want it to be too smooth.
  2. Lightly dust salmon fillets with mustard powder, salt and pepper. In a large nonstick skillet over medium-high heat, add in tallow.
  3. Place salmon fillets in the skillet and cook undisturbed for 4-5 minutes. Salmon will be well brown. Gently flip salmon and cook for an additional 3-4 minutes.
  4. Gently toss the salad greens with 1 tablespoon of sauce. Serve the salmon with almond anchoïade and salad.
