Meatloaf Gugelhupf

This bacon-covered meatloaf with feta cheese is made with a blend of pork and beef and cooked in an unusual kugelhupf pan. It is so flavourful and juicy and great as a warm starter or as a main course with salads, or vegetables. The bacon adds savory saltiness, smokiness and crunch on top and help retain the moisture. Keto or not, this upgraded meatloaf will be a huge hit with everyone who enjoys comfort food. If desired, boil the accumulated juice with 120 ml cream to make a gravy if desired.

 
  • 2 tbsp Lard (or olive oil)
  • 1 Large yellow onion, peeled and finely chopped
  • 2 Garlic cloves, peeled and minced
  • 500 g Pork mince
  • 500 g Beef mince
  • 2 Medium eggs
  • 2 tsp Dijon mustard
  • 30 g Pork rinds, crushed (or coconut flour or almond flour)
  • Salt and black pepper
  • 100 g Feta cheese, cubed
  • 300 g Bacon strips
  1. Heat lard or oil in a large pan over medium heat. Once hot, add chopped onion. Sauté until the onion is soft and aromatic, 5-7 minutes. Add minced garlic and cook for an additional 1-2 minutes.
  2. Transfer the onion mixture to a large bowl. Add in mince, eggs, mustard, crushed pork rinds or nut flour. Season the mixture generously and combine thoroughly. Mix the feta cubes into the mixture.
  3. Preheat the oven to 160C/320F. Grease a 22cm kugelhupf cake tin and line with the bacon strips.
  4. Add the mince mixture to the pan and fold the bacon over it.
  5. Bake in the middle of hot oven for 50 minutes. Remove the bundt cake from the oven, turn out the kugelhupf onto a baking tray lined with baking paper and bake for a further 30-40 minutes until the bacon is crispy. Allow the meatloaf to cool 10-15 minutes before slicing.

  4. Kugelhupf is such a delightful word, this is why I find German language so fun and amusing and lovely. At the same time I despise Italian and Portuguese which most people seem to like most. I find them fugly as hell. German is uber fun.

  16. Angie, This is an unusual looking but great sounding meatloaf. Bacon does make everything better! I love my wife's meatloaf...lb. of spicy pork sausage and 1.5 lbs. of ground beef with the top coated in a thick layer of parmesan cheese...but this version is intriguing. Take Care, Big Daddy Dave

    This is every bacon lover’s dream! I wish we had flavorful and not-too-smoky bacon here in the United States. I would definitely make this if I could get good bacon like yours. David (C & L)
