Crispy Oven Baked Chicken Wings

Thanks to a wonderful homemade spice rub, these chicken wings are perfectly crispy outside and very juicy tender inside. The trick to crispy flavourful wings are to pat the wings dry with paper towels and marinate them in the fridge overnight. You don't even have to toss them with baking powder, which is another widespread hack to crispy up the wings. Enjoy them as an appetizer or party snack!

 
Spice Rub
  • 800 g Chicken wings without tips and halved at joints
  • 4 tbsp Tallow, melted (or olive oil)
  • 1 Lemon, cut into wedges, to serve
  • 1 tbsp Cilantro, chopped, to serve
  • 1+1/2 tbsp Garlic powder
  • 1+1/2 tbsp Onion powder
  • 1 tsp Smoked paprika
  • 1/2-1 tsp Cayenne pepper
  • 2 tsp Cumin powder
  • 1+1/2 tsp Oregano
  • 1 tsp Freshly milled black pepper
  • 1/2 tsp Sea salt
  1. In a small bow, combine garlic powder, onion powder, smoked paprika, cumin, oregano, Cayenne, pepper, and salt.
  2. Arrange the chicken wings in a large bowl or tray, drizzle with melted tallow or olive oil, and sprinkle with the spice rub. Mix thoroughly so the chicken is thoroughly coated. Allow to rest for at least an hour or up to overnight in the fridge, if possible.
  3. Preheat your oven to 230C/450F and set the rack to the middle position.
  4. Arrange the chicken wings on a baking tray and place it in the hot oven. Bake for 45-55 minutes until deep golden and crispy. Garnish with lemon wedges and cilantro.
