Broad Beans, Spring Onions and Cilantro Salad

This broad bean salad is a simple and flavorful dish that uses blanched broad beans, spring onions, cilantro leaves, and a simple vinaigrette. It's nutritious and super easy to make, and can be enjoyed as a light yet satisfying plant-based meal, side dish, or appetizer when served with some homemade bread. It's a great addition to any meal.

 
  • 300 g Podded broad beans, fresh or frozen
  • 2 Spring onions, sliced on diagonal
  • 2 tbsp Chopped parsley
  • Sprouts, to garnish (optional)
  • 1 clove Garlic, peeled and crushed
  • 1 Chilli pepper, deseeded and chopped
  • 2 tbsp Extra-virgin olive oil
  • 2 tsp Freshly squeezed lemon juice
  1. Bring a medium pot of lightly salted water to a boil. Add shelled beans to the boiling water and blanch for 2 minutes. Remove and cool in iced water or under cold running water.
  2. Remove the skins from the broad beans by splitting them with your fingernail and slipping out the bean.
  3. Place the broad beans, spring onions, and parsley in a bowl.
  4. Mix the garlic, chilli, olive oil and lemon juice together and drizzle over the vegetables. Toss gently. Taste and season. Garnish with sprouts if using.

  4. Me gustan las habas frescas, pero no las he puesto nunca en una ensalada, no he tenido costumbre. Así como las presentas, tan bien acompañadas y con esa vinagreta, se ven muy ricas. Ahora en verano es lo que apetece.

  9. Ein ganz toller, einfacher aber sehr leckerer Salat, hier in Deutschland fehlt leider nur der Sommer, es sind nur 16 Grad, es fühlt sich fast so an, als wäre es schon Herbst, man bekommt schon lust auf Kürbis.

  21. Love broad beans but not able to have them as often as we wish to because only the frozen ones are available for podded, and they are also not widely seen in the grocery stores.
