Baked Yoghurt Chicken Drumsticks

Tuck into these succulent and flavourful chicken drumsticks marinated in a delicious gluten-free yoghurt sauce. Chicken drumsticks with skin on, and bone in are full of flavour, and because they're economical, quick to prepare, and kid-friendly, drumsticks are an easy weeknight option. And this is also a great dish when you are entertaining as you can marinate the chicken the night before and just put it in the oven once your friends have arrived.

 
Fresh and Crunchy Salad
  • 300 g Greek yoghurt
  • 3 Garlic cloves, peeled and finely minced
  • 1 tbsp Grated root ginger
  • 1 Green chilli, seeds removed and finely chopped
  • 25 g Flat parsley or coriander, chopped
  • 1 tsp Garam masala
  • 1 tsp Ground turmeric
  • 1/2 tsp Smoked paprika
  • 1 tsp Tamarind paste or 1 tbsp lime juice
  • 1-1.2 kg Chicken drumsticks
  • 1 Persian cucumber
  • 2 Large vine tomatoes
  • 1 Small red onion
  • 100 g Pomegranate seeds
  • 1 tbsp Extra-virgin olive oil
  • 1 tbsp Lime juice
  • 1/4 tsp Ground cumin
  • Salt and pepper to taste
  • 1 tbsp Finely chopped chives (or parsley or mint)
  1. In a bowl, mix the yoghurt with the garlic, ginger, chilli, parsley or coriander, all the spices and the tamarind paste or lime juice.
  2. Slash each chicken drumstick to allow the flavours to really work their way in, then turn to coat thoroughly in the marinade, massaging it in. Cover and marinate in the fridge for at least 1 hour or overnight, if time permits.
  3. Preheat the oven to 200C/400F. Spread the chicken drumsticks out on a lined baking tray, season and bake for 45-50 minutes, or until the chicken is cooked and slightly charred.
  4. Meanwhile prepare the salad. Cut the cucumber in half lengthways and scoop out the seeds with a teaspoon. Slice into half moons and put them in a bowl. Quarter the tomatoes and remove the seeds, then cut each quarter into 4 or 5 strips and add to the bowl, along with the onion, halved and thinly sliced. Mix in the pomegranate seeds.
  5. In another bowl mix the oil, lime juice, cumin and salt and pepper to taste. You can add some chilli flakes to this if you want to heat it up. Whisk it well and then add it to the salad with the chives. Mix it all well and chill and serve with the chicken.

  10. Hope you had a nice Sunday lunch today. It is still so hot here, over 4oC that I refuse to cook and will just buy something for lunch tomorrow when I venture outside to go shopping in the morning. It is so hot that when I went shopping two days ago, just a ten minute walk, both chocolate and little butter cube melted in my bag before I came home.

  24. These drumsticks look incredible and sound so flavourful that my mouth was watering as I read through the ingredient list. At first I thought they were breaded but with the flavours packed into the marinade, who needs breading? Looks like wonderful picnic food.
