Spicy Buttermilk and Almond Crumbed Baked Chicken

Spicy, crispy, nutty and keto-friendly, these wings are certain to become your next go-to snack recipe. They are marinated with a spicy buttermilk marinade in the fridge for up to 24 hours, then baked until golden crispy with an almond coating and served with a cool minty yoghurt dressing that takes the edge off the heat and can be prepared one day ahead if you want.

 
ChickenYoghurt Sauce
  • 500 ml Buttermilk
  • 1 Egg
  • 1 tsp Tabasco sauce
  • 2 Garlic cloves, peeled and minced
  • 1/2 tsp Sea salt
  • Freshly ground pepper
  • 800 g Chicken wings without wingtips, halved at joints
  • 100 g Roasted skin-on almonds
  • 30 g Sesame seeds
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 2 tsp Smoked paprika
  • 250 g Thick plain yoghurt
  • 1 clove Garlic, peeled and minced
  • 1/2 tsp Ground cumin
  • 1 Spring onion, finely chopped
  • 2 tbsp Mint leaves, finely chopped
  • Salt and pepper
  1. Combine the buttermilk, egg, tabasco and minced garlic together in a large container. Season with salt and pepper, then add the chicken, turning to coat. Cover and refrigerate for up to 24 hours.
  2. In a food processor, add in almonds, sesame seeds, and spices and process until well chopped but not completely smooth.
  3. Preheat the oven to 180C/350F. Tip the chicken into a large sieve to drain off the marinade. Working with one piece of chicken at a time and holding it over a plate, sprinkle with the almond crumbs until well coated. Place on a baking tray and repeat with the remaining chicken.
  4. Bake for 45 minutes, gently turning the chicken every 15 minutes for even browning until cooked through.
  5. Combine all the ingredients for the yoghurt sauce in a bowl and season. Serve the chicken hot or warm with the yoghurt sauce.

  7. I eat chicken wings all the time. They come grilled , and sold cheaply at our local supermarket. I feel the paprika, garlic, onion, pepper, and other spices. I don't think they use your more expensive ingredients such as: almonds, youghurt, buttermilk.
