Sesame Crusted Avocado Cucumber Salad

Get ready to experience a side dish or appetizer like no other with this beautiful and fun Sesame Crusted Avocado Cucumber Salad. It combines the velvety goodness of avocado with the delicate nuttiness and earthiness of toasted black sesame seeds, crisp, fresh cucumbers, cherry radishes and sweetly fragrant raspberries. You can use white sesame seeds or a mixture of both black and white if you prefer.

 
SaladVinaigrette
  • 150 g Black sesame seeds, toasted
  • 2 Persian cucumbers
  • 3-5 Cherry radishes, quartered
  • 2 Ripe avocados, halved and peeled
  • 60 g Mixed salad leaves
  • 100 g Fresh raspberries
  • 1/2 tbsp Finely chopped parsley
  • Dried cornflower
  • 4 tbsp Extra-virgin olive oil
  • 2 tbsp Red wine vinegar
  • 1 tsp Maple syrup
  • 1/2 tbsp Parsley, chopped
  • Sea salt and black pepper
  1. Dry toast black sesame seeds in a fry pan over low heat for 2-3 minutes. Remove to a plate and set aside to cool.
  2. Using a vegetable peeler, thinly peel the cucumber and roll up each ribbon. Cut the cherry radishes into 4 wedges.
  3. Cut each avocado in half, discard the stone and peel. Place avocado half to the sesame seeds and gentely press the seeds into the avocado until completely coated. Repeat with the remaining halves.
  4. Combine all the ingredients for the vinaigrette until well combined.
  5. Toss the salad leaves with two tablespoons of vinaigrette and place them on a platter. Add the sesame crusted avocados on top. Place the rolled-up ribbons of cucumber, quartered radishes and raspberries around the platter. Sprinkle the chopped parsley and dry cornflowers over. Serve with the remaining dressing.
