Smoked Salmon Mousse with Caviar

These wonderfully sophisticated bite-sized appetizers or snacks are incredibly easy to prepare yet impressive and can be done in 10 minutes. Smoked salmon is delicious and packed with nutrients, vitamins, and omega-3 fatty acids. Turning them into a mousse made with cream cheese is even better. Black caviar are optional, but they do add an elegant touch to the appetizers that your family or guests will love. The mousse can be made one day ahead and stored in your fridge. It actually taste better the next day as the flavors have time to develop. If you don't have a pastry bag, put the mousse into a small sealable plastic bag and cut the tip off the corner of the bag. You can also put the mousse in a bowl and serve with vegetables or/and crackers.

 
  • 1 Cucumber, sliced
  • 150 g Cold smoked salmon
  • 150 g Cream cheese
  • 50 g Crème fraiche
  • 1 Lime, juiced (or juice of half of a lemon)
  • A large pinch of smoked paprika
  • A large pinch of garlic powder
  • Freshly milled black pepper, to taste
  • Black caviar
  • Pink peppercorns
  • Dill
  1. Rinse and dry the cucumber. Cut crossways into 1-1.5cm slices. Place cucumber slices on a serving plate.
  2. Place the smoked salmon, cream cheese, crème fraiche, lime juice, smoked paprika, garlic powder and black pepper in your food processor bowl and blitz until smooth, about 5 minutes, stopping if necessary, to scrape the sides with a spatula.
  3. Transfer the mousse to a pastry bag and pipe it onto cucumber slices Garnish with black caviar, and dill. Crush a couple of pink peppercorns over.

  27. @Anonymous I made these the other night for company, and everyone loved them! My one mistake was slicing the cucumbers too thin, as they got a little bit soft and we’re hard to pick up. I know better for the future! The flavors are incredible! David (C&L)
