Salmon with Creamy Wild Garlic Sauce

These pan-seared salmon fillets are smothered in a creamy luscious sauce with wild garlic. It's fast, simple and juicy on the inside with perfectly crisp edges. A mouth-watering recipe, all cooked in one pan and ready in 15 minutes. It's gluten-free and keto-friendly.

 
  • 1 tbsp Ghee or olive oil
  • 2x150 g Skinless salmon fillets
  • Salt and pepper
  • 1 Onion, finely chopped
  • 50 ml Chicken broth or white wine
  • 200 ml Heavy cream
  • 50 g Wild garlic
  • 50 g Freshly grated Parmesan cheese
  • Juice and zest of 1 small organic lemon
  • 10 g Wild garlic, finely chopped
  1. Heat the ghee in a medium skillet over medium-high heat. Season the salmon on both sides with salt and pepper, and cook in the hot skillet for 3-5 minutes on each side. Remove from the pan and set aside.
  2. Add a little more ghee or olive oil to the same pan if necessary. Add the onion and stir fry until translucent. Add broth and allow the sauce to reduce down slightly.
  3. Reduce heat to low, add the heavy cream, and bring to a gentle simmer while stirring occasionally. Season the cream sauce with salt and pepper to your taste.
  4. Add in wild garlic and allow to wilt in the sauce. Add in the Parmesan cheese, lemon juice and zest. Allow the sauce to simmer for a further minute until cheese melts through.
  5. Return the salmon to the skillet and scatter over the wild garlic. Spoon some sauce over each fillet.

    I will have to see if our Whole Foods market has wild garlic this year. They did last year, and I’ll have to look at the date to see if this is the right time. I would love this dish… It’s beautiful, and the flavors are amazing. David (C&L)
