Packed with flavour and simple ingredients, this easy, creamy and delicious butter chicken is a weeknight winner and will be a hit with the whole family. Serve with flatbreads or rice. Butter chicken is very much like chicken curry, only it tends to be creamier and richer than chicken curry, with heavier spices. If you're a curry lover, this is a must-try dish for you.

- 25 g Ginger, peeled and grated
- 3 Garlic cloves, finely minced
- Juice of 1 small lemon
- 2 tbsp Tandoori masala powder
- 1 tbsp Yoghurt
- 600 g Boneless, skinless chicken thighs, cut into large pieces

- 1 tbsp Ghee
- 2 tbsp Butter
- 1 large red onion, cut into thin wedges
- 5 Cardamom pods, cracked open and seeds crushed
- 1 tsp Fennel seeds
- 1½ tsp Ground paprika
- 1 tsp Cumin seeds, toasted and crushed
- 250 g Tomato puree
- 200 g Cream

- Combine ginger, garlic, lemon juice, tandoori powder, and yoghurt in a large bowl. Add the chicken, then toss to combine. Chill for 30 minutes or overnight.
- Heat the ghee in a large deep non-stick frying pan over high heat. Cook the chicken for 5 minutes or until golden brown. Do this in two batches if necessary. Transfer the chicken to another plate and keep warm.
- Lower the heat to medium and add in butter. Add the onion and cook for 2-3 minutes until softened, then add the spices and cook for a further 1-2 minutes until fragrant.
- Return the chicken to the pan, and add the tomato puree and bring to a simmer. Cook for 4-5 minutes, add cream and simmer gently for a further 15-20 minutes or until sauce has thickened slightly.
- Garnish with chopped flat parsley and chillies. Serve with flatbreads or / and rice.
