Gluten Free Sweet Potato and Mâche Muffins

These naturally gluten-free, refined-sugar-free muffins with sweet potato and mâche are super easy, healthy, hearty and delicious! They make for a great breakfast or snack you can feel great about eating. If you can't find mâche, then use spinach or arugula instead. To make this recipe dairy free, replace Greek yoghurt with coconut yoghurt. Keep in mind that the key to light and tender muffins is not to overmix the batter – just a few quick folds to get everything combined. Enjoy them while still warm, and store the rest in an airtight container at room temperature for up to 3-4 days.

  • 150 g Sweet potato, peeled and coarsely grated
  • 160 g Buckwheat flour, sifted
  • 100 g Oat flour
  • 2 tsp Baking powder
  • 1 tsp Ground ginger
  • 1/4 tsp Sea salt
  • 30 g Pumpkin seeds (or rolled oats), for the topping
  • 3 Medium eggs, at room-temperature
  • 60 g Mâche (or spinach / arugula)
  • 5 Soft dates, pitted
  • 180 g Greek-style yoghurt, full fat
  • 125 ml Olive oil
  • 2 tsp Lemon zest
  1. Preheat the oven to 200C/400F. Grease a 12-hole muffin tin (or 8 jumbo muffin cups) and line it with baking parchment or paper muffin cases.
  2. Peel and roughly grate the sweet potato. Place them in a large bowl along with the rest of the dry ingredients. Stir together, make a well in the middle and set aside.
  3. Crack the eggs into a food processor, add the mâche along with the rest of the wet ingredients and blend until completely smooth.
  4. Pour the wet mixture into the well of the dry ingredients, gently fold together, making sure not to overmix, or the muffins will turn out tough.
  5. Divide the muffin batter into the prepared tin and top each muffin with some pumpkin seeds. Bake for 25-30 minutes until golden and a skewer inserted in the middle of one of the muffins comes out clean.
  6. Remove from the oven and set aside to cool slightly before transferring to a wire rack to cool completely or enjoying while still warm!

  24. Thanks for the glufree recipe, I like it that we do not have to cook the potatoes first! I made some regular potato and red bean salad for lunch with bacon flavoured mayo and spring onions.
