Beef Kabobs

Colourful and so delicious, these steak kabobs or kebabs use keto-friendly rub with olive oil, rosemary and spices that will give you more succulent and flavoursome beef bites. You can use ribeye, strip steak, fillet or sirloin to make the kabobs. My favourite is ribeye, but leaner sirloin is typically the best choice for using when making beef kabobs, as it is relatively tender, has great flavour, and holds together well on the skewer. Tzatziki can be prepared a day before. I used metal skewers to thread the meat, if using wood or bamboo skewers, then soak them first in water for 30 minutes. This will help prevent them from burning.

 
TzatzikiKabobs
  • 1 Persian cucumber, grated
  • 300 g Greek yoghurt
  • 1 clove Garlic, peeled and minced
  • 2 tbsp Dill, finely chopped
  • 1/2 Lemon, juiced
  • Salt and pepper
  • 450 g Sirloin or ribeye steak, cubed
  • 2 tbsp Olive oil
  • 1/3 tsp Sea salt
  • 1/2 tsp Black pepper
  • 1/2-3/4 tsp Dried rosemary
  • 1/2-3/4 tbsp Chilli powder
  • 1 tsp Garlic powder
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 400 g Tri-colour cherry tomatoes
  • 1 tbsp Parsley, chopped
  1. Finely grate the cucumber and place them in a sieve. Sprinkle a pinch of salt over the grated cucumber and let sit for a few minutes, then squeeze out all the liquid. Tip into a bowl with the yoghurt, garlic, dill, lemon juice, salt and pepper, and mix well. Chill for at least an hour before using. You can prepare the sauce a day before.
  2. Cut the steak into inch cubes and place them in a bowl. Add in olive oil, salt, pepper, dried rosemary, chilli, garlic, cumin and smoked paprika. Use your hands or a large spoon to mix well. Alternate threading the seasoned beef cubes and tomatoes on the 9 metal skewers.
  3. Heat up a grill pan or grill on medium-high and cook kabobs for 3-4 minutes or depending on how done you want your steak, rotating once or twice. Garnish with chopped parsley.
