A quick raw salad recipe for cucumber spaghetti tossed with a tangy, herby dill Dijon dressing. It's easy, healthy and so deliciously refreshing. If you don't have a spiralizer, then try to julienn or shave the cucumbers with a mandoline.
- 3 Persian cucumbers (or 2 English cucumbers)
- Salt
- 1 Small red onion, peeled, halved and sliced
- 5 stalk Dill, chopped
- 1 tbsp Honey Dijon mustard (I used Maille)
- 1+1/2 tbsp Apple cider vinegar (white balsamic vinegar or lemon juice)
- 60 ml Extra-virgin olive oil
- Freshly milled black pepper
- 50 g Salted roasted peanuts

- Wash the cucumbers, rub dry and cut into spaghetti with a Spiralizer . Place the cucumber in a sieve, season with salt and leave to marinate for about 30 minutes.
- Peel, halve and slice the red onion. Wash the dill, shake dry and coarsely chopped. Mix the Dijon mustard and vinegar in a bowl and slowly stir in the olive oil. Season with salt and pepper. Mix in onion and dill.
- Place cucumber spaghetti in a mixing bowl. Add in half of the dressing and gently toss together. Arrange on plates or in a bowl and sprinkle with salted roasted peanuts.

ReplyDeleteCucumbers do go well with mustard! Are you pickling anything this Autumn for the winter? It is currently the pickling season in my country. I bought about a dozen of jars of pickled cucumbers, dozen of mixed salad, dozen of beets etc.

ReplyDeleteYou hit my sweet spot on this one, we love gurka (cucumbers) and this looks to be a lovely salad to go with some grilled meat. I'll have to substitute on the nuts, but I think roasted pumpkin seeds will work just fine.
