These 3-ingredient Zucchini Parmesan Crisps are so delicious and addictive. A tasty addition to salads or soups or to enjoy as a crunchy snack. To avoid soggy zucchini crisps, you have to squeeze the excess moisture out of the vegetables before mixing with Parmesan and baking. It's gluten-free and keto-friendly.

- Preheat oven to 200C/400F and line a baking tray with baking paper. Set aside. Use a box grater to grate the zucchini.
- Place the grated zucchini in a kitchen towel or cheesecloth and brought the corners together, and twisted to make a pouch. Now twist and squeeze the moisture out of the zucchini.
- Transfer the squeezed dry zucchini to a mixing bowl and add the grated Parmesan and Italian seasoning. Gently mix everything togther.
- Transfer tablespoonfuls of the mixture to the prepared baking sheet. You should have 9 large piles. Gently flatten the piles.
- Bake for 18-20 minutes, until the they are sizzling, the cheese has almost all but melted and the edges are starting to brown. Be careful not to burn them. Remove and cool on the baking sheet for about 5 minutes. Serve with your favourite dip!
