Not only are these stuffed mushrooms with quail eggs are pretty, but they are also deliciously healthy and fun to prepare as an appetizer for parties, a side dish, for breakfast or dinner. The preparation is rather simple and guaranteed a crowd-pleaser.

- Clean the mushrooms and carefully remove the stems. Dice the stems finely. Melt a tablespoon of butter in a skillet and add in finely chopped garlic and chopped mushroom stems. Stirfry for a minute. Season with salt and pepper and stir in the sour cream.
- Preheat the oven to 160C/320F. Melt the remaining butter and toss gently with mushroom caps. Fill with the prepared filling, sprinkle with grated cheese and crack a quail egg into each mushroom. Season with salt and pepper. Top with chopped fresh theyme.
- Bake the mushrooms for about 10-12 minutes. If you prefer the yolks runny, cut the baking time down to 8 minutes.
