Stuffed Mushrooms with Quail Eggs

Not only are these stuffed mushrooms with quail eggs are pretty, but they are also deliciously healthy and fun to prepare as an appetizer for parties, a side dish, for breakfast or dinner. The preparation is rather simple and guaranteed a crowd-pleaser.

 
  • 10-12 Mushrooms, large
  • 60 g Butter
  • 1 Garlic clove, finely chopped
  • Salt and pepper, to taste
  • 1 tbsp Sour cream
  • 10-12 Quail eggs
  • 40 g Cheddar cheese, grated
  • Fresh thyme
  1. Clean the mushrooms and carefully remove the stems. Dice the stems finely. Melt a tablespoon of butter in a skillet and add in finely chopped garlic and chopped mushroom stems. Stirfry for a minute. Season with salt and pepper and stir in the sour cream.
  2. Preheat the oven to 160C/320F. Melt the remaining butter and toss gently with mushroom caps. Fill with the prepared filling, sprinkle with grated cheese and crack a quail egg into each mushroom. Season with salt and pepper. Top with chopped fresh theyme.
  3. Bake the mushrooms for about 10-12 minutes. If you prefer the yolks runny, cut the baking time down to 8 minutes.
