Made up with delicious layers of a buttery coconut shortbread base, sweet sticky homemade blackberry jam and a luscious coconut topping. This recipe is sweet, delicious and easily adaptable and will be your new go-to slice recipe. Swap for other homemade jam, fruit curd or even applesauce if you prefer. It's great for an easy dessert, or makes a lovely sweet treat to have with afternoon tea.

- 120 g Butter, softened
- 60 g Caster sugar
- 1 Egg, at room-temperature
- 150 g Plain flour
- 40 g Desiccated coconut

- 250 g Homemade blackberry jam
- 2 Eggs, lightly whisked
- 1 tsp Vanilla extract
- 100 g Caster sugar
- 130 g Desiccated coconut
- 40 g Coconut chips, crushed

- Preheat oven to 180C/350F. Grease a 24cm x 30cm pan and line the base and sides with baking paper, allowing the sides to overhang.
- Use an electric mixer to beat the butter and sugar in a bowl until pale and creamy. Add egg and beat until well combined. Stir in the flour and coconut. Turn into the prepared pan and press the mixture evenly on the bottom. Bake for 15-20 minutes or until light golden. Cool slightly and spread jam over the crust.
- To make the coconut topping, whisk eggs, sugar and vanilla extract in a large bowl. Add the both coconut and use a fork to stir until combined.
- Spread the coconut mixture over jam. Use the back of a spoon to flatten the coconut mixture slightly. Bake for 20-25 minutes or until nicely golden. Set aside to cool before slicing.

ReplyDeleteNo!! You can't tempt me like this, when I have just emptied my fridge, freezer and larder of anything sweet or full of carbohydrates. Hubby is awaiting results of a diabetes test, so we are rather pre-empting the outcome! I have foolishly agreed to support his new diet regime, so I shall have to close my eyes to some of your delicious looking sweet treats in future :)
