Fennel Salad with Orange and Dried Cherry Tomatoes

This fresh, crunchy, aromatic salad combines delicate aniseed-flavoured fennel, peppery rocket leaves, sweet tangy citrus, distinctively tart, chewy dried cherry tomatoes and a simple salad dressing for a full-flavoured side dish or light lunch. Oranges can be swapped with mandarine or clementine, if desired. You can even throw in some toasted chickpeas, nuts, or seeds for extra crunch and nutrients.

 
  • 1 bulb / 500 - 600 g Fennel, thinly shaved
  • 3 Oranges, peeled and sliced
  • 1 small bunch Arugula
  • Fresh mint leaves
  • 20 g Dried cherry tomatoes in olive oil
  • Apple cider vinegar
  • Olive oil from soaking dried tomatoes
  • Salt and black pepper
  1. Remove the fronds from the fennel bulb and set aside. Cut away any tough stalks, then thinly slice the bulb using a sharp knife or ideally a mandolin.
  2. Peel and very thinly slice the oranges, then arrange on a platter.
  3. Place the shaved fennel in a mixing bowl. Mix with the mint, arugula, dried cherry tomatoes, a splash of apple cider vinegar and oil, and season well with sea salt and black pepper.
  4. Scatter the fennel mixture over the oranges and enjoy!
