Baked Salmon with Green Asparagus

Whip up this quick and easy one pan salmon recipe for your dinner! In just 20 minutes, you can have a complete dinner ready to serve your family. Salmon and asparagus are baked together with compound butter infused with lemon and fresh herbs that add depth of flavour and richness to the dish. It's gluten-free and keto-friendly.

 
Lemon Herb Butter
  • 2x300 g Salmon fillets
  • 700 g Green asparagus, tough ends trimmed
  • 2 tbsp Olive oil
  • Sea salt and freshly milled black pepper
  • 1 Lime (or lemon), sliced
  • 80 g Unsalted butter, at room temperature
  • 2 tsp Lemon zest
  • 1 tsp Lemon juice
  • 1/2 tsp Fresh thyme, finely chopped
  • 1/2 tsp Fresh rosemary, finely chopped
  • 1 tsp Fresh flat parsley, finely chopped
  • Sea salt and ground black pepper, to taste
  1. Preheat the oven to 220C/430F. Mash butter in a bowl until smooth and creamy. Mix lemon zest, lemon juice, chopped herbs, salt, and black pepper into butter until thoroughly combined.
  2. Place salmon fillets skin side-down in a baking dish. Arrange trimmed green asparagus around the salmon in a single layer. Drizzle asparagus with olive oil and roll to coat. Sprinkle both asparagus and salmon with salt and pepper.
  3. Spread 2/3 of the compound butter over the salmon fillets and the remaining over the asparagus. Top each salmon fillet with two lemon slices and sprinkle some chopped parsley over if desired. Bake for 12-14 minutes until salmon flakes easily and asparagus fork tender.

  10. This taste combination is really making my mouth water, just thinking about it!

    Hubby isn't a huge fan of asparagus, however I could half and half this pan, with an alternative vegetable for him to enjoy.

    Our favourite Italian restaurant serves an asparagus starter which I always order - 'Asparagi Arrosto' - Roasted asparagus with extra virgin olive oil and parmesan shavings!!

  23. I love this recipe....I make it very similar, but I place the salmon in a pot or pan because I don't like the smell of salmon in my oven.....but I know the result tastes better in the oven.......Abrazotes, Marcela
