The tangy, garlicky anchovy dressing is fantastic with creamy, buttery avocado, crispy red lettuce and tender red radish cress. The dressing really brings the boring lettuce salad to life and it packs full of flavours. Plus it just takes 15 minutes to prepare. If desired, add some prawns or smoked salmon for the protein boost.

- Put anchovy fillets, garlic cloves, red-wine vinegar, lemon juice, red onion, Dijon mustard, and coarse salt in a blender. Let stand 10 minutes. With blender running, pour in extra-virgin olive oil in a slow, steady stream and blend until emulsified. Season with freshly ground pepper.
- Place the salad leaves and sliced red onions in a large serving platter and dress with 2 tablespoons of the vinaigrette.
- Halve and pit the avocados. Carefully peel off the skin and place them, cut-side up, on the dressed salad. Spoon a teaspoonful of the vinaigrette into each avocado half. Sprinkle chopped cilantro and cress on top.
Love that wooden dish! Do you know that I have never had me an avocado?

La vinagreta le da una nueva vida a la ensalada. En casa nos encanta el aguacate, por eso en este caso que tiene tanto protagonismo, será la ensalada ideal para nosotros.
ReplyDeleteUn beso.
I love avocado's, however I'm not too keen on anchovies, so I might have to miss those out. A tasty sounding recipe though! :)

I usually have my avocado as-is. Recently, my friend prepared avocado with a wee bit of soy sauce and I enjoyed it! So I am so sure this avocado salad with salty garlicky anchovy dressing - the balance of earthy, nutty, savory will be superb.

ReplyDeleteAngie, My wife would kill for this salad. With my need to avoid greens, she'd either have to make it for company or order it out...if she could find such a lovely creation. Take Care, Big Daddy Dave
