Eat it on its own with crusty bread to mop up those gorgeous juices, or as part of a meze-style spread. The quality of the tomatoes you use will make all the difference, so use the ripest and sweetest ones you can find. It's incredibly simple but, when made with perfectly ripe tomatoes, is a real delight. The punchy dressing, with its garlic, ginger and fish sauce, is what makes this salad so special. Use whatever mixture of tomatoes you can get your hands on, and serve alongside fish dishes or a steak.

Ottolenghi's Tomato Salad with Ginger Garlic Dressing

from Ottolenghi Test Kitchen – Shelf Love
  • 5 Garlic cloves, peeled and thinly sliced
  • 35 g Ginger root, peeled and julienned
  • 135 ml Olive oil
  • Sea salt and black pepper
  • 4 Limes, finely zested and juiced
  • 2 tbsp Fish sauce (or use 1½ tbsp light soy sauce)
  • 2 Coriander leaves, roughly chopped
  • 800 g Mixed cherry tomatoes, cut in half lengthways
  • 1 Small red onion, peeled and cut into thin rounds
  1. Put the sliced garlic, julienned ginger, olive oil and a half teaspoon of sea salt in a small pan, set it over a medium heat and cook gently, swirling the pan every now and then, for 10-15 minutes, until the solids are lightly golden. Strain through a sieve set over a bowl to catch the oil, then leave the oil to cool for about 10 minutes. Transfer the garlic and ginger to a plate lined with a piece of kitchen paper, where they will crisp up further.
  2. Once the oil has cooled a little, use a fork to whisk in the lime zest and juice, fish sauce and coriander.
  3. Gently toss all the tomatoes with a teaspoon of flaked salt and a generous grind of pepper, then arrange on a platter with the sliced red onion in a single layer and overlaps slightly. Spoon over the dressing, scatter on the crispy ginger and garlic, and serve right away.

  2. This looks absolutely gorgeous, but I'll save it for summer, our tomatoes are absolutely horrible in the winter months, no flavour at all.

  14. I do ever so love to dip bread into tomato and onion salad juices! Yours scares me a bit as it has all the things that give me nightmares = ginger, fish sauce, coriander LOL but it does look pretty indeed.

  22. That dressing sounds amazing. We're heading into the dead of winter here in the northern hemisphere, but we do have decent hydroponic tomatoes as well as cherry tomatoes—and this sounds too good to wait until next year for!
