These delicious lemon garlic butter chicken thighs are packed with flavours, keto friendly, and not only it is easy to make and it will come together in no time, making it the perfect dish to serve any weekday. Serve alongside your favorite vegetables or seasonal salad or over pasta, mashed potatoes, and rice if you are not doing low-carb. You can also serve this with some crusty bread to soak up all that amazing lemon garlic butter sauce.

- Preheat the oven to 190C/375F. Mince one garlic clove. Smash the remaining 6 garlic cloves with the side of a chef's knife.
- Melt the butter in a microwave-safe bowl and heat in a microwave oven until melted, 1 minute. Stir in lemon juice, minced and smashed garlic cloves. Set aside.
- Pat chicken thighs dry with a paper towel. Generously season chicken thighs with salt and pepper.
- Heat ghee in a large oven-safe skillet over medium-high heat. Cook chicken thighs, skin-side down, for 5 to 7 minutes or until golden brown and crispy. Flip chicken over and brush the skin with lemon-garlic-butter mixture. Pour remaining butter mixture and lemon slices into skillet.
- Transfer the whole skillet to the oven and bake until chicken is no longer pink at the bone and the juices run clear, about 30 minutes. An instant-read thermometer inserted near the bone should read 74C/165F. Brush skin every 10 minutes with pan juice.
- Remove skillet from the oven and place chicken on a serving platter. Drizzle chicken with pan juices and garnish with parsley and lemon wedges.

ReplyDelete@Chef MimiIt's called lemon garlic butter chicken :-) But of course you can fry the chicken with olive oil if desired. I prefer to cook with ghee and animal fat.

ReplyDeleteLove garlic butter and lemon flavours but have never thought of combining the two flavours together. Definitely a combination I shall be trying, although I would probably use chicken breasts. as that is the only cut we tend to eat, not keen on bone in, or skin on, joints! Thanks for the great idea of serving with crusty bread too, can't waste any of that delicious juice :)
