Keto Avocado Pancakes

Simple and speedy to prepare, these fluffy, naturally gluten-free pancakes don't need any flour. Instead, the almonds and avocado add a good combination of flavours. The result is a tender, savoury pancake, perfect for serving up for a weekend breakfast in bed. You can add a sunny side-up egg or/and a couple of rashers of streaky bacon. Or simply drizzle the pancakes with some monkfruit sweetened syrup for a keto-friendly meal. Packed with protein and healthy fat, this is a great way to kick start your day.

  • 1 Large ripe avocado (250 - 300 g)
  • 1 Lime, zested and juiced
  • 4 Medium eggs at room-temperature
  • 100 g Finely ground blanched almond
  • 1/2 tsp Baking powder
  • Pinch of salt
  • Avocado oil for frying
  • 1 tbsp Monkfruit sweetened keto syrup, optional
  1. Mash the avocado with a fork in a mixing bowl. Stir in the eggs, lime zest and juice. Mix the almonds, baking powder, and salt and whisk into the avocado-egg mixture.
  2. Heat a little avocado oil in a non-stick frying pan over medium-high heat until hot. Reduce the heat, add 1 large tablespoon of batter into the pan. When the bottom is baked and comes away by itself, flip the pancake and cook one more minute. Repeat with the remaining batter. It makes nine 8-cm pancakes.
  3. Serve with keto syrup if using or regular maple syrup if you ain't into keto.

  11. Estos pancakes quedan muy apetecibles y para comenzar el día deben llenar de energía. No sé lo que es el aceite de aguacate, no lo conozco, pero con aceite de oliva son muy sanos también, los haré así.
