A superbly rich and creamy white chocolate ganache tart that requires no baking and uses seasonal raspberries. The crust can be prepared one day ahead. Chill the tart until the cream is fully set for easier cutting or put it in the freezer for an hour if you are in a rush. Use coconut cream and coconut fat as substitutes if you are sensitive to dairy. While I have used a 23cm round tart pan, you could use whatever shaped tart pan or even individual-sized ones you have, but keep in mind this may affect the amounts of white chocolate ganache you’ll need.

- Place butter cookies in a large ziploc bag. Seal all but 1-inch of the bag, so that air can escape. Take a rolling pin and roll over the ziploc bag of cookies until you have fine crumbs.
- Place cookie crumbs and melted butter in a large bowl and stir with a fork until the mixture looks like wet sand. Press the mixture into the bottom and up the sides of an 23cm/9-inch fluted tart tin with a loose base. Refrigerate whilst preparing the filling.
- Finely chop the white chocolate and place it in a heat proof medium-sized bowl. Place the soften butter in the same bowl. Warm the crème fraîche over medium heat until bubbles appear around the edges of the cream and steam starts to rise from the surface.
- Pour the cream over the white chocolate and butter. Allow it to sit for 30 seconds and then stir with a spatula until the ganache is smooth. Set the ganache aside and cool for about 30 minutes.
- Pour the white chocoalte ganache into the crust and place the tart in the refrigerator and let it chill for 3-4 hours until set. You can freeze the tart for an hour if you can't wait. Garnish the tart with raspberries, mint leaves and grated white chocolate.
