Oatmeal Breakfast Bowl with Coconut Milk and Cacao Nibs

A bowl of oatmeal is one of the healthy ways to kick start your morning. It is easy, filling, delicious and healthy without added sugar. Oatmeal is packed with fiber, which can help to ease gut problems, and provides a wealth of vitamins and nutrients that we need for a healthy and nutritious start to the day. I used coconut milk to prepare the porridge, but any milk or even water would be just fine. It's naturally sweetened with fruits, but if you really have to add a sweetener besides fresh fruit, opt for a natural one like maple syrup or honey. A teaspoon is all you need.

 
  • 120 ml Coconut milk (or milk of your choice)
  • 40 g Rolled oats
  • 1 Banana
  • 1 tsp Coconut oil
  • 1/2 tsp Cinnamon powder
  • 30-50 g Fresh berries
  • 1 tbsp Almond butter
  • 1/2 tbsp Cacao nibs
  1. Bring the coconut milk to the boil in a small saucepan. Add in rolled oats and let simmer for about 5 minutes over medium heat, stirring occasionally.
  2. Peel the banana and cut it in half lengthwise. Heat the coconut oil in a pan and fry the banana halves over a medium heat for 1-2 minutes on each side. Sprinkle the banana with the cinnamon powder.
  3. Wash and pat dry the berries. Put the porridge in a bowl, arrange the banana halves with the almond butter on top and top with berries and cocoa nibs.

    I like oatmeal with coconut milk. and a dash of vanilla extract. I think it gives it a slight cookie flavor

  28. Angie, We just returned from a 10 day road trip so I'm trying to catch up. I have enough blog material from our trip to last for quite some time... My wife and I love oatmeal. We'll have to try your version. Our favorite so far is the oatmeal with Amish butter, blueberries or dried cranberries, dark brown sugar/Splenda and half and half milk. Very satisfying!
