Grape Clafoutis

Clafoutis is a rustic dessert from the Limousin region in France, made with fruit that is covered with a custard batter, which is unlike a traditional custard, as it has flour in it that gives it more structure. Traditionally the fruit should be cherries, unpitted black cherries specifically. But when Autumn arrives, bake this desserts with plums, figs, grapes or use whatever fruit you have on hand. It comes together quickly with just a few ingredients, is equally as tasty warm, at room-temperatur, or chilled, and keeps well for several days.

 

Grape Clafoutis

  • 400 g Grapes
  • 3 Lrge eggs, at room temperature
  • 1 Egg yolk
  • 70 g White spelt flour (German #630)
  • 1 tsp Vanilla extract
  • 100 g White sugar
  • 2 tbsp Vanila sugar for the topping
  • 330 ml Coconut milk (or regular milk)
  • Softened butter, for greasing the baking dishes
  1. Preheat the oven to 190C/375F. Smear two small baking dishes (or one large casserole dish) liberally with butter.
  2. Place grapes in a single layer in the baking dishes.
  3. Whizz the eggs, flour, vanilla extracts, white sugar, and coconut milk together in an immersion blender or a standard blender until smooth.
  4. Pour the batter over the grapes and sprinkle each casserole with a tablepoon of vanilla sugar. Bake the clafoutis until the custard is just set, about 35 minutes for two small casserole dishes, 45 minutes for the large casserole.

  5. Too bad I used all my grapes to make jelly, because this sounds good. I may have to try it with apples. (But I did make one with strawberries back in that fruit's season, so I agree with you how easy and yummy a clafouti is.) hugs-Erika

  28. i've only ever made cherry clafoutis but you can use many different fruits of course. I have a recipe that always tastes eggy no matter what i do. Must give yours a go :)
