This delicious aubergine dip is a healthier alternative to packaged spreads from the store. The dip gets its extraordinary flavour from the caramelisation of the onions. The recipe is very simple and quick to prepare and is made with just a few ingredients. The dip can be stored in an airtight container in the refrigerator for up to 1 week.

- Preheat the oven to 200C/400F. Wash the aubergines, rub dry and prick a few times on all sides with a fork. Wrap aubergines in aluminium foil, place on a baking tray. Bake the aubergines in the oven for approx. 40 minutes until soft.
- Peel and finely dice the onion. Heat the olive oil in a pan. Add the onions and stirfry at a low temperature for about 10 minutes. Stir occasionally. Add the sugar to the onions and let them caramelise for approx. 5-6 minutes.
- Hard-boil the eggs in a saucepan for about 10 minutes. Rinse with cold water, leave to cool and peel.
- Scrape the flesh of the aubergines from the skin with a spoon and place in a bowl. Add the caramelised onions and hard-boiled eggs and process with a stick blender to a fine paste. Season the aubergine puree with salt and black pepper to taste.
- Place it in a bowl and drizzle a teaspoon of olive oil over. Sprinkle with sumac or pepper flakes and fresh herbs of your choice.
