Thick ribeyes are rubbed with a spicy Cajun spice mix that are guaranteed to kick your dinner up a notch while cucumber salsa gives this meaty meal a fresh upgrade. It's a simple recipe for a delightful and a perfectly seasoned meal that's sure to please the family.

Cucmber Salsa
  • 2x300-350 g Ribeye steak
  • 1 tbsp Cajun spice mix
  • 1 Garlic clove, minced
  • 1/2 tsp Dried thyme
  • 1/2 tsp Sea salt
  • 2 tbsp Olive oil
  • 1 English cucumber, finely chopped
  • 1 Red onion, finely chopped
  • 1 tbsp Extra-virgin olive oil
  • 1 tbsp Apple cider vinegar
  • 1 tbsp Finely chopped fresh parsley
  • Salt and black pepper to taste
  1. Whisk together Cajun spice mix, minced garlic, thyme, salt and 2 tablespoons of olive oil in a bowl. Rub the steak evenly with the marinade and let marinate for 30 minutes, or up to 4 hours. If you are marinating the steak longer than 30 minutes, then cover it with a plastic wrap and rest in the refridgerator. Bring it to the room-temperature 30 minutes before cooking.
  2. In a medium bowl, toss cucumber, red onion, olive oil, ACV and parsley. Season with salt and pepper.
  3. Heat grill or a large grill pan to high. Add in steaks and cook roughly 2 minutes per side for rare, 3-4 minutes per side for medium rare or 5-6 minutes per side for medium.
  4. Transfer steak to cutting board and let rest for 5-7minutes. Slice steak against the grain and serve with cucumber salsa.

  5. A happy marriage methinks . . . the steak looks most appetizing and certainly needs no other side than the spicy cucumber salad. As I normally seem to slice or grate my cucumbers it will be interesting to chop . . .
