White Asparagus Salad with Radish Vinaigrette

This white asparagus salad is made with cherry radishes, hard-boiled egg, and fresh herbs--a typical German spring recipe that's ready in no time. Try it served with some garlic bread or croutons. Omit the eggs if you want to make it vegan. White asparagus can be difficult to locate if you are not in Europe, simply use green variety.

White Asparagus Salad with Radish Vinaigrette

  • 2 Hard boiled eggs, peeled and coarsely chopped
  • 750 g White asparagus, trimmed and cut each into 3 pcs
  • Sea salt
  • 10 Cherry radishes
  • 2 tbsp White balsamic vinegar
  • 2 tbsp Chicken broth
  • 2 tbsp Walnut oil
  • 2 tbso Olive oil
  • Freshly ground black pepper
  • A handful of fresh herbs (chervil, parsley or chive), finely chopped
  1. Bring a large pot of water to boil over medium-high heat. Add the the asparagus pieces and blanch for 5-8 minutes until tender yet firm. Refresh under cold water. Drain.
  2. Wash, clean and thinly slice the cherry radishes. Place white balsamic, chicken broth, walnut oil and olive oil in a jar. Season with salt and pepper. Shake well. Add to the radish slices and set aside to allow the flavours to meld for 15 minutes.
  3. Now gently toss the drained white asparagus with vinaigrette and arrange them into two shallow bowls. Top with chopped eggs and fresh herbs.

  1. Yay, white asparagus is one of my favorite veggies, I don’t know why but it’s just so exotic and who doesn’t love asparagus in the spring time. I have to try this radish vinaigrette, radishes are spicy and delicious.

  2. It been a couple of years since I've seen white asparagus here. I'm going to have to contact my local market and see if they can get some in because I love everything about this salad and happen to have all of the ingredients, except for the asparagus.

  12. Angie, sounds perfect for spring! I rarely buy white asparagus because on the rare occasions when it is available it is much more expensive than the green. So I'll probably make this with green.

  13. Really beautiful salad with the white asparagus. I like there more subbtle taste. Did you know I once made white asparagus ice cream...but could not find fresh ones yet so I tried the jar version...the ice cream was terrible lol. Every since thme I seen them fresh all the time.

  29. You are correct! I hv not seen white asparagus here. But at least I have tried and enjoyed it :) Is white asparagus expensive there? It is usually considered gourmet when served in restaurants, probably because they are hard to find.

  51. Such a pretty salad. I grew asparagus when we lived in Connecticut and tried to get white ones by covering them from the sunlight. We love it and you've inspired me to order plants and create a new patch here for wonderful recipes like this one.
