Quark Cheese Berry Popsicles

These popsicles have German Quark cheese in them which is packed with protein and perfect for a hot summer day treat. Quark is a very common fresh cheese that you can get it everywhere here in Germany. Alternatively, you can use Greek yoghurt or cottage cheese.

  • 200 g 20% Quark cheese
  • 150 g Frozen berries
  • 1-2 tbsp Honey
  1. Stir all the ingredients together with a wooden spoon. Spoon the mixture into the moulds and smooth the surface. Insert popsicle sticks and freeze for at least 2 hours.

  25. I'm familiar with quark, it was usually served at breakfast buffets of all the hotels that I have stayed at both in Germany as well as Austria. I can imagine how good your pretty berry popsicles are.

  26. I have never heard of quark cheese...after an internet search I learned some facts about this cheese...I can imagine how delicious are these popsicles with berries...a perfect treat for the warm weather.

  30. Oh you have no idea how jealous I am that you have quark so readily available. I have never had it frozen; we always used it in German cheesecake. There are substitutions that work, but I will forever notice that it is a little different from what I grew up with :)

  61. Hi Angie, I've been missing out of here, I plan on making lots of popsicles this summer and I love the idea of using yogurt, I haven't seen the quark here, but I'm thinking with lots of fresh fruit it will be just as good as yours. Hope you have been well.

  114. They must be really yummy with quark cheese. Unfortunately, you can't easily find that here in Arizona so I'll try them with yogurt. I'm sure they'll be really good anyway. I also like that you didn't blend it so you find bits of fruit when you bite into it.

  122. Oh wow I've never thought of making ice cream with a quark cheese. How thick is German quark? Polish twarog is quite thick. I think I may need to add some yogurt
