- Rinse quinoa in a fine sieve until water runs clear, drain and transfer to a medium saucepan. Add water and bring to a boil over high heat. Reduce heat to low. Simmer for 10 to 15 minutes or until water has absorbed. Set aside to cool and fluff with a fork.
- Blend all the vinaigrette ingredients together, adding the olive oil last until you get the desired consistency.
- Place the quinoa, diced cucumber, chickpeas, and quartered strawberries in a large bowl. Add in dressing and toss to combine.

Angie, this salad is gorgeous! Packed full of goodness and brimming with light. I love your creative sundried tomato dressing too - a must try!
ReplyDeleteThis is truly cool. It is looking quite colorful. One fabulous point over here is all the three main ingredients used in the recipe are of great nutritional values. Strawberries are rich in vitamins like c,b5,b6 . They give you great looking skin too. Chick peas are my favorite and i love eating them they maintain proper blood sugar levels. And "Quinoa" you don't even believe what wonders it could make. It is called as the "Super Food". A perfect recipe to be tasted my everyone......... :)
ReplyDeleteOh my Angie this is so fantastic. I am definitely trying this.

I've cooked the rice, and will prepare the rest tomorrow, and shall have this for dinner, but I think I will eat it heated being winter here, so thanks for a great site, and such easy, and beautiful interesting recipes...
