Raw Energy Bars

http://schneiderchen.de | © 2011 | http://angiesrecipes.blogspot.com

Fruity, nutty, naturally sweet, these raw energy bars made from dried prunes, figs, nuts and cocoa powder are a delicious and healthy snack to keep up your energy between meals, or after a workout.

Raw Energy Bars

adapted from Just As Delish
  • 150 g Dried prunes, roughly chopped
  • 150 g Dried figs
  • 200 g Raw cashew nuts, chopped
  • 150 g Raw almonds
  • 20 g Cocoa powder
  • 35 g Ovaltine chocolate malt powder
  • A pinch of sea salt
  • 2 tbsp Homemade vanilla extract
  1. Line a 15x25-cm rectangular pan with a plastic film. Place chopped prunes, nuts, cocoa powder, Ovaltine chocolate malt powder and sea salt in a blender or food processor. Pulse a few times until all the ingredients come together.
  2. Add in homemade vanilla extract and pulse until it reaches a dry but moist dough consistency. Scrape the mixture into the lined pan, press evenly with a rubber spatula, and chill for about an hour before cutting into bars.

  1. This type of bar, made with natural ingredients, is what I need during the school runs (back to school soon in the UK). I make breakfast for the kids, lunch for my husband + kids, but I never have time to eat MY breakfast!! Another delicious and healthy recipe, Angie. Thanks

  15. These look so amazing & healthy ... I actually was a raw vegan for about three months, a few years back. I loved the lifestyle but it was too hard to keep up with along with life and other "things". Still love the raw concept, though ... Happy Sunday !

  17. Sorry for not commenting yet, Angie. Our Internet is in and out for the last couple days, so I'm lucky now to be able to comment, but the tropical storm is getting worse for today, and tomorrow!

Love, love your raw energy bar that I'm anxious to make asap! The only thing I will leave out is the Ovaltine, and just use all cocoa powder. Since I was a kid...never got the hang of this malt flavor, just like Root Beer, another flavor is not my favorite! Photos are very creative and beautiful...as always! xo

  80. Yum these sound so good. I love granola bars and these are packed with nutrients and they're naturally sweet.

One thing though about the raw nuts- these won't last long before the nuts go bad so refrigeration would be helpful. Also raw nuts often harbor rodent eggs unless stored in the refrigerator or freezer to kill them off. I found this out the hard way. I posted it on my blog.

Great recipe. Looking forward to trying it.
