Zucchini Fritters


I am sending this dish to Reeni' Side Dish Showdown-Anything Goes with Spring vegetables for May.

Side Dish Showdown Blogger Event

  • 300 g Zucchini
  • 1 tbsp Plain flour
  • 1/5 tsp Sweet paprika powder
  • Salt and pepper to taste
  • Oil for deep frying
  1. Cut the zucchini into even lengths of 8 cm and cut each length into sticks. Season the flour with salt, pepper and the paprika. Roll the zucchini sticks in the flour, making sure they are well coated.
  2. Heat a skillet 1/3 filled with oil until hot. Fry the zucchini sticks in batches until they are crisp and golden. Drain each batch on kitchen paper and season with more salt. Server hot with desired sauce.

    I've seen zucchini fritters before, but none that look like yours. yours is a really original version.... kind of like fries. I love this idea. Now we need a special dipping sauce :)

  42. Well, really, Angie! How can this not be delicious? Anything deep fried is always deadly - in more ways than one - haha! I love the blossoms, too - and am really glad to see this, as we will be planting the flower beds and our box gardens the next two weeks in Edmonton (after the first snow in May since 1979 melts!!!!) and I will do some zucchini just for the flowers. I love stuffing them and then deep frying them. OMgosh - deadly - and gorgeous. It is such a versatile veggie.

    We love zucchini sticks and like your paprika/flour dredging idea. We like our small zucchinis cut into quarter wedges served with a mustard sauce.

  76. well, zucchinis are a versatile veggie, there's no doubt about that. however, they do need some help in the flavor department, and i can think of nothing better than breading and frying them. well done!
